Matildin

Bright straw yellow colour.
To the nose, it is fruity and intense with a scent of ripe exotic fruit, citrus fruit and with strong hints of butter, honey; the minerality evolves with age.
The flavour is soft, round, savoury with a dry finish and very persistent.
A generally fresh wine which preserves its features and evolves pleasantly after a few years.

Vines:

100% Chardonnay.

Grape harvest:

By hand in boxes during the second ten days of August.

Area of production:

Hills around Ravenna, "Via Rossa" estate. Spurred-cordon training with a density of 5,500 vine stocks per hectare and a maximal yield of 95 quintals per hectare.

Vinification:

Soft pressing and cryomaceration with the addition of selected yeasts.

Ageing and refinement:

In steel on its yeasts for six months with periodic "b√Ętonnage" activities, followed by a refinement of 12 months in steel vats and of 4 months in bottles.

Alcoholic content: 13.5% vol Ph: 3.4 Sugar content: 0.8 g/l Total acidity: 5.2 g/l
